Throughout the week Chef Daniel’s French-influenced island cuisine will be available as specials to ‘21’ patrons in the dining room; guests will enjoy the gourmet flavors of the Caribbean, drawing on the islands bounty of sweet potatoes, okra, yam, dahseens, breadnuts, love apples, plantains, green bananas and a variety of West Indies spices to create exotic combinations. After substantial training in some of his native France’s most respected restaurants and a quick stint in Gambia at the Coconut Residence, Chef Daniel Echasseriau has spent most of his career cooking in several of the Caribbean’s most prestigious properties, including Glitter Bay in Barbados. He is the winner of the prestigious 2006 “Taste of the Caribbean” Gold Medal in Miami. |  |
