HÔTEL DE LA CITÉ CHEF RETAINS MICHELIN STAR AWARD

La Barbacane, reputed to be the best restaurant in the South of France, was awarded a Michelin Star when Franck Putelat was Executive Chef in 2002.  Jérôme Ryon, who took over as Executive Chef in February 2006, has managed to retain the impressive accolade, barely a year after joining. 

Jérôme was appointed Executive Sous-Chef at Hôtel de la Cité in 1998, and has since travelled extensively to promote the hotel’s French haute cuisine in the US, Estonia, Japan and lately in Russia.  Jerome graduated from the Thonon-les-Bains Hotel and Catering School in 1992, and has worked with many great chefs including Frank Putelat, who was Executive of Hôtel de la Cité for four years, and the eccentric Mark Veyrat at L’Auberge de l’Eridan.  Jérôme has also successfully participated in several gastronomic competitions and in December 2005, he won the Taittinger International Culinary Competition.

La Barbacane’s neo-gothic décor features an impressive fireplace, cathedral chairs, royal blue walls embossed with gold and magnificent stained glass windows overlooking the fortifications of the medieval citadel of Carcassonne.  The emphasis of the restaurant’s dishes is on a sophisticated skilful re-thinking of traditional cuisine and the use of ingredients of the highest quality. 

Carcassonne lies in the Languedoc-Rousillon region of Southwestern France in the foothills of the Pyrénées and is a one hour flight from London. Hôtel de la Cité was built in 1909 on the site of a former Episcopal Palace and is situated between Carcassonne’s two main attractions - the Basilica St. Nazaire and the Château Comtal. The hotel’s secluded gardens offer a haven of peace protected from the bustle of La Cité.
