The atmosphere in La Barbacane is one of charm and elegance – from its beautiful interior of wood panels and stained glass windows to the enchanting view, it allows views of the hotel's gardens and the Citadel ramparts, with a glimpse of Carcassonne town in the distance.

La Barbacane offers a wide range of tempting dishes, created with imagination, flair and artistry by Executive Chef, Jérôme Ryon, and Pastry Chef, Régis Chanel. The emphasis is on a sophisticated skilful re-thinking of traditional cuisine and the use of ingredients of the highest quality. 

The only Michelin-star restaurant in the Cité of Carcassonne
In March 2002, La Barbacane was proud to receive its first Michelin star.  Chef Jérôme Ryon's talent and the efforts of his team were rewarded with the Michelin star confirmed in the year 2008. La Barbacane remains the only Michelin-star restaurant in the Cité of Carcassonne.

La Barbacane Restaurant is open for dinner from 7.30 pm to 9.30 pm and can seat up to 100 guests.
