Established in 1975, the Capannelle Vineyard became quickly recognized by connoisseurs for the exceptional quality of its wines, as well as its innovation in growing and blending and the advanced technology of its cellars.
The cellars were designed to guarantee that the wine would be handled and stored consistently through each stage of its development.
The wines and olive oil are made from grapes and olive trees grown on this estate, cultivated without use of chemical fertilizers or insecticides.
Judicious pruning ensures high quality. Wine making from harvest through to bottling takes place in a controlled temperature. Fermentation takes place under refrigeration to avoid excessive heat build up.
Capannelle has always invested in the most advanced wine making technology. Stainless steel vats, pipes and valves are used throughout, except for ageing which is in wood.
Stainless steel piping is used to transfer the wine from vats to casks. Even the drains are made of stainless steel. Vats for ageing are made of French oak, located in sandstone vaults. The vat room is always spotless.
The barrel room contains French Massif Central oak barrels for the maturing of wine. Only wine held in these barrels for two years can be labelled “barrique”.
The bottling area is covered in shockproof ceramic, just like the casking area. Cleanliness is maintained with 15 atmosphere water guns.
After maturing in wood, the wine is bottled for further ageing in glass panelled bins under controlled temperature.
Capannelle Chardonnay, a white wine of body to rival the great French white Burgundy, and Capannelle Solare, vintage red aged in barrels, are found on the wine lists of the most exclusive hotels and restaurants, from the Hotel Cipriani in Venice to the Copacabana Palace in Rio de Janeiro, to “21” in New York and Harry’s Bar in London.
The magnum is most suitable for banquets. 50&50 is a blend of 50% Merlot of Montepulciano from Avignonesi and Sangiovese from Capannelle. Half bottles are served aboard the Venice Simplon Orient Express.
Capannelle 2000 was created from the finest harvests of the early 1990’s, carefully aged in oak barrels and designed to reach perfection in 2000 and thereafter. It is only sold in magnums and is a prized Millennium celebration gift. | | |
